Eggplant belongs to the nightshade family of vegetables, which includes tomatoes. Like unripe tomatoes, raw eggplant contains solanine, a compound that is toxic to cats. Cats should never eat raw eggplant. Cooking an eggplant reduces the levels of solanine. Cats should never eat fried eggplant, or any other type of food fried in oil or with any seasonings.
